Atkins Diet Recipes: Buffalo Wings
These wings are some of the best reasons to go on the Atkins Diet. They are completely legal for all phases of the diet and absolutely delicious. The Diet Coke is a unique ingredient, but it really does the trick. I think by adding the wings to the simmering sauce, the collagen helps thicken the sauce as well.
Ingredients
3 pounds chicken wings, separated at joints, tips discarded
1 cup Louisiana-style hot sauce (Franks Hot Sauce recommended)
1 can Diet Coke with Splenda
1 tsp cayenne pepper, or to taste
1 tsp ground black pepper, or to taste
1/2 tsp Thyme
1/2 tsp Garlic Powder
1 tablespoon soy sauce
1/2 TBS Dried Chopped Onions
Instructions:
* Cut the wings into pieces.
* Mix other ingredients into large pot and start simmering.
* Add wings to pot to give flavor
* Heat Oil to 350-375F degrees
* Add wings to fryer and cook until done (12-14 minutes)
* Add wings back to Buffalo sauce and coat thoroughly

Forgot to add–Diet RC Cola (sold at Wal-Mart) is also made with Splenda.

Wow! Unbelievable! The wings were definitely a hit. I was unable to find Diet Coke with Splenda, but Wal-Mart carries a store brand “Diet Rite” made with Splenda–if that helps others out there in search of a diet cola. Thanks again for guilt-free buffalo wings! Yum!

This would have been nearly zero as I made it, and with your recipe would have been even less. Black pepper, soy sauce, and garlic have a bit, but nothing that would amount to be close to 1g. I would however mark the sauce as 1g just to be safe.

So how many carbs per serving is this recipe? I made this recipe earlier tonight, but I removed the dried onion flakes and the cayenne pepper. It was FABULOUS! I couldn’t find any carbs on the chicken packaging or the hot sauce, but that just seems far fetched that this would have zero carbs, right?

I use my oil until the quality gets so dark or the taste affects the flavor of the food. That typically takes 10 or so uses. It helps if you run the oil through a fine mesh strainer or cheesecloth to remove the particulate as well. As for fryer recommendations, I am currently using a GE fryer, but Waring Pro makes typically the best fryers. Just get the largest one (in liter capacity) you can find.

I use corn oil at the moment, but I really prefer peanut oil. Basically any high smoke temp oil works well.

That’s too bad. You alternatively could make it with Tabasco sauce as well, but would have to figure out the correct mixture with water. As for asparatame, ugh. I am glad Coke still produces Splenda-sweetened soda here. If you have any cola’s sweetened with Splenda or the new Stevia-based sweetener, they should be fine as well.
The wings were a delicious Christmas treat today.
